The hand-harvested fruit was destemmed and tipped into stainless steel fermenters to cold soak for between 3 and 6 days to gently aid colour and tannin extraction. The fermentation was with a mix of natural and commercial yeasts and lasted from 10 to 18 days with light cap management and peak temperatures of 32-34 degrees. After another 12 to 18 days on skins, the wine was pressed and settled overnight before aging 11 months in old French barriques. The blended wine was unfined and lightly filtered for clarity prior to bottling in April 2015.
TClassic and delicious Gibbston Pinot Noir with a nose full of dark cherries, wild strawberries, plums and savoury spices. The palate is vibrant and intense with rich fruit flavours of blackberry and plum laced with clove and wild thyme spice. Silky, long tannins round out this well structured wine.
