Waitiri Creek Harriet Rosé

Handpicked Pinot Noir was gently whole bunch pressed before the juice was left to cold settle. The juice was racked off gross lees and innoculated with an aromatic yeast. Fermentation lasted several weeks and once complete, the wine was chilled to below zero degrees, lightly sulphured and left to sit on fermentation lees for a further month. The wine was then racked and filtered immediately before bottling on 30 October 2014.
This Rosé is a bright apricot/salmon pink in colour with aromas on the nose of fresh berries and white peaches. The palate shows vibrant strawberry and raspberry fruit with an underlying hint of ripe watermelon, white peach and floral notes, balanced by lively acidity and a dry, lingering finish. Serve lightly chilled. It may be cellared for up to three years.
